Green rice

Green rice is a rare ancient rice variety that is grown in the spring water of Kakitagawa. It has been certified as a specialty of Shimizu Town. During the harvest season, beautiful dark purple rice ears spread across the rice fields. When threshed, it has a faint green color and a delightful chewy texture. It is a healthy rice rich in minerals and easy to incorporate into meals.
